Deep garnet-purple in color, the 2011 Tyche’s Mustard Shiraz is a little closed at this youthful stage, though it offers up notes of crushed blackberries, cassis and tar, accented by hints of pepper, licorice and coffee. Full-bodied, tightl y knit and firmly structured in the mouth, it has a great backbone of grainy tannins and lively acid carrying the youthful flavors through to a long finish. Drink it 2015 to 2025+.

“Deep crimson-purple; the bouquet is pure McLaren Vale with dark chocolate woven through plum and blackberry fruit; on the first taste these characters come through strongly on the fore-palate before giving way to somewhat austere tannins, but on retasting, the continuity of line is re-established, and a heartbeat of almost sweet fruit comes like a sparklet on the aftertaste.”

"Tyche, the goddess of luck and fortune, has looked over this vineyard. The initial site featured six land holdings, five unsuitable for grape growing were sold and the profits paid for the vines. Luck would have it that from an early age these vines have produced exceptional fruit." 4 hektar parcel i Beautiful View, blot 60 meter over havet. Limsten/ler, plantet 1995. Høstet 17. marts. Chester: "This vineyard is at the lowest altitude of all our holdings and are closest to the sea and therefore typify the maritime climate. From the first vintage, this vineyard produced intensely flavoured, tannic grapes that are treated like mustard when blending; a little goes a long way." Vinen: "Tyches Mustard is a great example of soil to glass transfer. The nose displays a spicy herbal lift, reminiscent of mustard perhaps? This is the same odour we smell as we walk through this vineyard with its abundance of mustard weed. There is also an alluring dark chocolate note, laced with hints of liquorice and fennel. The palate is rich and juicy but at the same time crunchy, owing to the fine gritty tannins. Surprisingly, amongst all of this dark fruit we are also able to perceive juicy red fruits and spicy pepper notes. A perfect example of a wine showing sweet and savoury characters abiding in perfect harmony." Årgang 2011: "There was ample winter and spring rain which provided good moisture and resulted in healthy canopies. Summer conditions were very mild. Grapes ripened gracefully with only a few small rain episodes, enough to keep the vines fresh and vibrant. Rainfall was only a little over average for the first months of the year." Vinmageren: "Small batches of grapes are crushed gently and then transferred to five tonne headed down open fermenters. Foot treading is undertaken two thirds of the way through fermentation. The wine is then basket pressed and transferred to a mixture of new and used French and old American oak barriques to complete fermentation. The barrel ferments are aged on lees, and there is no racking until final blending. Only the best Shiraz blocks from each vintage are selected to be part of the Amazing Sites range.

d'Arenberg är en av de historiskt sett viktigaste vinproducenterna i Australien. 1912 köpte Joseph Osborne en redan väl etablerad vingård på kullarna precis norr om McLaren Vale. Joseph's son, Frank, Byggde d'Arenberg's källare 1927. År 1943 var det dags för Frank's son, d'Arry, att börja arbeta på at d'Arenberg och 1957 buteljerades hans första berömda ”diagonal red stripe labelled wines”.

Under 60-talet hade d'Arenbergs viner nått kultstatus bland vinälskare och kritiker. Fram på 70-talet hade vinerna nått en signifikant internationellt erkännande. d'Arry's son, Chester, är fjärde generationen som tog över styret av företaget 1984. Han påbörjade genast en renovering av de 70 år gamla källarna och vingårdarna från slutet av 1800-talet. 1990 fick Chester utmärkelsen McLaren Vale Bushing King, som är ett pris som tilldelas den som tillverkar det bästa bordsvinet i McLaren Vale.

Vinmakarfilosofin på d'Arenberg är minimal behandling av druvorna samt en mycket varsam tillverkningsprocess. Till de röda vinerna, som kommer från mycket gamla rankor, används en Demoisy-avstjälkare, med stora valsar som gör det möjligt för ett stort antal druvor att passera igenom utan att skadas. Jäsningsprocessen sker i stora vaxbeklädda cementtankar. Den jästa frukten pressas genom en basket-press från 1800-talet. Standardvinerna lagras på nya och gamla franska och amerikanska ekfat i nio till 22 månader. Reserve-vinerna lagras 24 månader på ek.
